Creamy goat cheese and fragrant herbs help keep this boneless, skinless chicken breast moist along. Oven-frying still gives you that yummy crisp panko crust, but with much fewer calories. This is one of my daughter’s favorite recipes, and one I often serve at dinner parties – it’s a great low-budget option with enough sophistication to dress the occasion up.
