Sunchokes, also known as Jerusalem artichokes for their artichoke like flavor (sunchokes are actually the root a sunflower grown in North America) add flavor dimension to this earthy dish, while complimenting the texture of the potatoes. Crisp around the edges, but still soft enough in the center your teeth will glide through each buttery bite.
