Who knew I’ve been throwing away the best part of the beets all these years? My vegan assistant, better known as guinea pig number one, had a fit when she saw me tossing the beet greens, and told me to cook them as I would spinach – so I heated up some oil, and tossed in the garlic and ginger, a little soy sauce along with the greens, sprinkled with sesame seeds and fell in love!
